we are going for just shy of 5 weeks how would the flights work if we did that? would you have to book 4 flights effectually?

i know a lot of you travel and must do the long haul flight thing. I have never flown far enough to have the change flight half way through affair. What do these things entail? loitering around the airport or are you allowed out? im flying to india for honeymoon in may and have to do a change in Dubai, times varying from 2 hours to 12 hours. is it worth paying more for a short stopover or is it worth spending a while in Dubai as a sort of add on to the trip?
