What's truely shocking is they needed someone to point out the place was unquestionably dangerous and fucking filthy, whatever. Bravo for starting the list of thing to do though, I'd imagine it looks like 1) clean the fucking kitchens 2) learn the basics of food safey. "IF we do them", like it's not urgent. Fuck me, some people... BUT It's not about cleanliness these days, it's about filling in paperwork. Sad but true, so I understand from a chef/restaurateur of my aquaintance (with top marks for cleanliness etc.)

No blaming admin backlogs.

The thing is, it doesn't matter if your place is spotless - if you store food at the wrong temperature or have bad practices that allow the cross contamination of raw and cooked food - you are going to make some poor fucker ill. That is why they are so keen on temperature records of your fridges and such. Like I said before it is pretty basic stuff which makes you wonder how a place can get it so wrong that the inspector marks them 1 out of 5.
