A bit of fat won't kill you. You need some fat to burn fat I eat shit loads of fat from fish, nuts and seeds and I'm a right skinny get.

Bacon fried in pan then taken out to use later. Pour beaten eggs into hot frying pan and keep pushing the outer edge towards the middle and filling the gap with the still runny egg. Once it is all but cooked, put all your fillings in; bacon, cheese, etc. As the cheese starts to melt, fold the omlette in half and strainght onto a waiting WARM plate. (Not super-heated as they often do in hotels)

Anyway, made properly, Eggs Benedict is a cracking breakfast dish, not to fussed on Parma ham, but I do prefer to have ham rather than bacon I must admit
