The longer proving time would aerate the barm and, even if knocked back, would produce a larger, lighter flourcake. Barmcakes are used in chippies for this very quality - a flourcake would be too stodgy for chips for example. There are oven bottoms that can be referred to as muffins but nothing else. Cumbrian bumpkins will ask for chip muffins in chippies, similarly Burnley clampetts will ask for a ham and cheese teacake in butty shops.
