Best of luck pal! ive done a couple of roast dinners for me and her but never nowt on a grand scale, masterchef does give you the bug though

Usually the static balloon routine is good, but ask the butcher how long and what temp with veg and foil.

Gravy - Do it day before using Chicken wings, Carrots, Celery, Onion etc with veg stock. Veg - peeled and preped and ready to go day before. I always part boil and roast Carrots and Parsnips with the roasties.(add a little garlic and rosemary) Starter / Desert - I would go for something easy that can be made day before and served/finished on the day. ie Prawn Salad / Soup etc Jamie oliver Learn to cook book has a great roast dinner section that will help guide you through some of the different bits.
