for me the test is the problem, holiday paid and say one of the kids comes up positive

I'd expect Tenerife to be welcoming visitors by that point.
You'll most likely need proof of vaccinations and/or a very recent negative PCR test, but this is going to be the case pretty much everywhere for the foreseeable...
