I don't know how far the cellar is from the bar but even if each pump had to pour off a couple of pints before the caustic soda came through and then another pint after the water flush, cleaning the lines becomes an expensive business when you have 15-20 pumps. Now just think, if the owners said to clean (and lose that amount of beer) on a weekly basis but the manager did it fortnightly, would this show in his profits?
