I did some pre match training for Saturday today and can confirm that it is a bit too cold for shorts, especially when the sun goes in.

Nah.

Head is part and parcel of the brewing process, and connected to protein levels in hops. Too much and the head in lessened as it acts like an antifoam.

Head brewers understand the relationship between the ingredients, and how seasonal variations affect them slightly.

Also protects the flavour for me, and indicative of a well kept, well poured pint, from an establishment with decent throughput.

Actually that's a bit of a misnomer- it's dependant on the type of brew and the hops used, a large head on a beer isn't indicative of a well kept pint. Lots of bristish beers don't have large heads do to low carbonisation. Yes some like it to 'increase the flavour' and the smell - that's more about personal taste and if the beer - say a stout - is better for having a larger head whereas something like London Pride it's not as important nor does it lend itself to it.

I only am aware as I grew up in a household where my dad brewed his own for years. Weekends were spent going over to a brew shop in Blackburn as a kid. He used to do a really good Landlord and I don't drink bitter as a rule. Sept/Oct the garage would stink of hops. When I lived in Faversham Tuesday was hop day so the whole town stank of brewing.

The real ale/craft ale lot can put a glass eye to sleep in my humble opinion.

Largely correct.

It is amazing though, just how different the same beer can be at different establishments. That is entirely down to cellarmanship.

As for genuine ale- it isn't additionally carbonised and is still "live". Froth/gas is created naturally from the fermentation.

I've also been brewing for decades.

Then you know much more then I do. I'm afraid I didn't get my Dad's skill or interest. Mind you he was a Chemistry teacher and there's not a chance I'd be able to go and do that.
